  • 7 quarts plain popped corn
  • 2 cups slivered almonds (or alternative nuts)
  • 2 cups packed brown sugar
  • ½ cup light corn syrup
  • 1 teaspoon salt
  • 1 cup unsalted butter
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 250°F (120°C).
  2. In a large mixing bowl, combine popped corn and slivered almonds.
  3. In a saucepan over medium heat, melt the butter, then stir in brown sugar, corn syrup, and salt. Bring to a boil while stirring continuously. Boil without stirring for 4-5 minutes until golden.
  4. Remove from heat and stir in baking soda and vanilla extract.
  5. Pour the hot caramel sauce over the popcorn mixture, coating evenly with a wooden spoon.
  6. Spread the coated popcorn onto a parchment-lined baking sheet and bake for about 45 minutes, stirring every 15 minutes.
  7. Allow to cool completely before breaking into pieces.
