  • ½ cup butter (room temperature)
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1 tablespoon apple pie spice
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • For topping: ¼ cup melted butter, ½ cup sugar, 1 tablespoon cinnamon

Instructions

  1. Reduce apple cider in a saucepan over medium heat until halved (20–30 minutes). Let cool.
  2. Preheat oven to 350°F and grease a 9×5 loaf pan.
  3. Cream butter and brown sugar in a mixing bowl until light and fluffy.
  4. Beat in egg and vanilla until combined.
  5. Add dry ingredients and reduced cider; stir gently until just mixed.
  6. Pour batter into the prepared pan and bake for about 50 minutes or until a toothpick comes out clean.
  7. Cool in the pan for 15 minutes, then transfer to a cooling rack.
  8. Brush warm bread with melted butter and sprinkle with cinnamon sugar.
