  • ½ cup unsalted butter, softened
  • ½ cup sugar
  • ¼ cup light brown sugar
  • 1 large egg
  • 1½ cups all-purpose flour
  • 1 teaspoon cream of tartar
  • ½ teaspoon baking soda
  • 2 tablespoons sugar for cinnamon sugar coating
  • ¾ teaspoon nutmeg for cinnamon sugar coating
  • ½ teaspoon allspice for cinnamon sugar coating
  • ¾ teaspoon cinnamon for cinnamon sugar coating

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter, sugar, and brown sugar until smooth. Add the egg and apple cider; mix until well combined.
  3. In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt. Gradually add this dry mixture to the wet ingredients until just combined.
  4. In another small bowl, mix together the cinnamon sugar coating ingredients.
  5. Using a cookie scoop or tablespoon, form dough balls and roll in the cinnamon sugar mixture until fully coated. Place on the prepared baking sheet about 2 inches apart.
  6. Bake for 12-15 minutes or until edges are lightly golden. Allow cooling slightly before transferring to a wire rack.
