  • 4 large apples (2 Honeycrisp and 2 Granny Smith)
  • 1/3 cup brown sugar
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • 1/4 cup melted butter
  • 2 tbsp cornstarch (dissolved in water)
  • 5 tbsp butter (for streusel topping)
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar (for streusel)
  • 1 cup powdered sugar (for icing)
  • 2 tbsp milk (for icing)
  • 1/2 tsp vanilla (for icing)
  • 1/21 tsp cinnamon (for icing)

Instructions

  1. Preheat the oven to 400°F. Grease a muffin tin with softened butter.
  2. Press each cinnamon roll into the muffin cups, forming a cavity for filling.
  3. Slice and dice apples. Mix apples with brown sugar, cinnamon, lemon juice, melted butter, and cornstarch. Heat until thickened.
  4. Fill each roll cavity generously with the apple mixture.
  5. Combine streusel ingredients until crumbly; place on top of each roll.
  6. Bake for about 15 minutes, covering loosely with foil for the first five minutes.
  7. Whisk icing ingredients until smooth and drizzle over cooled rolls.
