  • 2 packs Pillsbury Grands cinnamon rolls (5 count each)
  • 4 large apples (2 Honeycrisp and 2 Granny Smith)
  • 1/3 cup brown sugar
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • 1/4 cup melted butter
  • 2 tbsp cornstarch (dissolved in water)
  • 5 tbsp butter (for streusel topping)
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar (for streusel topping)
  • 1/2 tsp ground cinnamon (for streusel topping)
  • 1/4 cup melted butter (for icing)
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a muffin tin with softened butter.
  2. Press each cinnamon roll into the muffin cups, creating space for the apple filling.
  3. Prepare the apple filling by peeling and dicing the apples. Mix with brown sugar, cinnamon, lemon juice, melted butter, and dissolved cornstarch. Heat briefly until thickened.
  4. Fill each roll cavity with the apple mixture using a slotted spoon to remove excess syrup.
  5. Combine streusel ingredients until crumbly and mound on top of the filling. Bake for about 15 minutes, covering for the first five minutes.
  6. While baking, mix icing ingredients until smooth. Cool rolls slightly before drizzling with icing.
