  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (100 g) light brown sugar, packed
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups (250 g) all-purpose flour, spooned and leveled
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • 1/3 cup apple cider
  • 1/3 cup fresh apple, peeled and grated

Instructions

  1. Preheat oven to 325°F (160°C) and line a 9 x 5 loaf pan with parchment paper.
  2. In a stand mixer, cream together butter and sugars until fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
  3. In a separate bowl, whisk together flour, baking powder, salt, and spices. Gradually add to the mixer alternating with apple cider.
  4. Gently fold in grated apples until just combined.
  5. Pour batter into the prepared pan and bake for 55-60 minutes or until a toothpick comes out clean.
  6. Cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
