Apricot & Almond Energy Bites are a delicious, no-bake snack that perfectly blends the sweet flavor of dried apricots with the crunch of raw almonds and the tropical touch of coconut. Ideal for busy individuals, these energy bites can be whipped up in just 10 minutes, making them a quick and nutritious option for on-the-go snacking.

Ingredients

  • 400 g whole dried apricots
  • 80 g halved dried apricots (chopped)
  • 80 g raw almonds
  • 60 g desiccated coconut (plus extra for rolling)
  • 1 tsp coconut oil
  • 1 tsp maple syrup
  • Pinch of salt
  • Pinch of cinnamon
  • Pinch of vanilla powder

Instructions

  1. In a food processor, blend whole dried apricots, coconut oil, maple syrup, salt, cinnamon, vanilla powder, almonds, and 60 g desiccated coconut for about 3 minutes until well combined.
  2. Add chopped halved apricots and remaining desiccated coconut; pulse for another minute until almonds are roughly chopped.
  3. Transfer the mixture to a clean surface and knead in the chopped apricots evenly.
  4. Shape the mixture into a log about 40 cm long and roll it in extra desiccated coconut to coat.
  5. Wrap tightly in plastic wrap and refrigerate for at least 2 hours until firm. Slice into bite-sized pieces.
