  • 250 g pure-butter puff pastry
  • 400 g sweet ripe apricots (pitted and cut into wedges)
  • 1 tbsp honey
  • 1 tsp lemon juice
  • 1 tsp fresh thyme leaves
  • 1 egg + 1 tsp milk (beaten)
  • Coarse sugar (for sprinkling)

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a medium bowl, combine apricots, honey, lemon juice, and thyme; toss gently.
  3. Cut puff pastry into twelve 8 cm squares and place on a parchment-lined baking sheet.
  4. Spoon apricot mixture onto the center of each square, leaving a 1 cm border.
  5. Brush edges with the egg wash and sprinkle with coarse sugar.
  6. Bake for about 20 minutes until golden brown.
  7. Cool slightly before serving.
