  • 150g medium egg noodles
  • 1 large carrot (julienned)
  • 5 radishes (sliced)
  • 3 cups red cabbage (thinly sliced)
  • 2 tbsp chunky peanut butter
  • 1 tbsp honey
  • 4 tbsp soy sauce
  • 2 tsp Sriracha sauce
  • 2 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 1 tsp grated fresh ginger
  • 1 clove garlic (pressed)
  • 10g cilantro
  • 23 green onions (sliced)
  • 1 tbsp sesame seeds

Instructions

  1. Cook the egg noodles according to package instructions; drain and set aside to cool.
  2. In a bowl, mix together peanut butter, honey, soy sauce, Sriracha, sesame oil, rice vinegar, ginger, and garlic until smooth.
  3. Combine the cooled noodles with the dressing in a large bowl.
  4. Add julienned carrots, sliced radishes, red cabbage, chopped cilantro, and green onions; toss gently to combine.
  5. Garnish with sesame seeds before serving.
