  • 8 pieces chicken drumsticks and thighs (on the bone, skinned)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 3 cups frozen mixed vegetables
  • 1/2 cup BBQ sauce (divided)
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Preheat your grill to medium-high heat or set your oven to 425F.
  2. Cut four large pieces of heavy-duty aluminum foil (18 x 12 inches) and lay them flat.
  3. In each foil piece, place 3/4 cup of frozen mixed vegetables.
  4. Season the chicken with salt, garlic powder, and smoked paprika; brush with 1/4 cup BBQ sauce.
  5. Place two pieces of seasoned chicken atop the vegetables in each packet, fold to seal tightly.
  6. Grill for 50-55 minutes or bake on a baking sheet for the same time until chicken reaches an internal temperature of 160F.
  7. Brush with remaining BBQ sauce and cook uncovered for an additional five minutes before serving.
