  • 2 Tablespoons Olive Oil
  • 4 Yellow Onions (sliced thin and evenly)
  • 2 Pounds Yukon Gold Potatoes (washed)
  • 4 Tablespoons Salted Butter (or non-dairy butter)
  • 3/4 Cup Half & Half or Full-Fat Coconut Milk or Dairy-Free Milk
  • 1 Teaspoon Kosher Salt
  • 1 Cup Parmesan Cheese (freshly grated)
  • 1 Bunch Chives (thinly chopped)
  • 2 Sprigs Fresh Thyme (stems removed)
  • 3 Leaves Fresh Sage (chopped)

Instructions

  1. Prepare onions by peeling and slicing them thinly.
  2. In a skillet over medium heat, heat olive oil and add sliced onions. Cook for 40-50 minutes until they are caramelized and golden brown.
  3. Meanwhile, wash and chop the Yukon Gold potatoes into small pieces. Boil in a large pot of water for about 20 minutes until fork-tender.
  4. Drain the potatoes and mash them until smooth using a potato masher.
  5. Mix in salted butter, kosher salt, and half & half (or coconut milk) until creamy.
  6. Combine half of the caramelized onions with the mashed potatoes along with Parmesan cheese.
  7. Serve in a bowl topped with remaining caramelized onions and garnish with chopped chives, thyme, sage, and melted butter.
