  • 2 tablespoons olive oil
  • 4 yellow onions (thinly sliced)
  • 2 pounds Yukon Gold potatoes (washed)
  • 4 tablespoons salted butter (or non-dairy butter)
  • 3/4 cup half & half or full-fat coconut milk
  • 1 teaspoon kosher salt
  • 1 cup Parmesan cheese (freshly grated)
  • Fresh herbs: chives, thyme, sage

Instructions

  1. Slice onions thinly and set aside.
  2. In a skillet over medium heat, add olive oil. Cook onions for 40–50 minutes until browned and caramelized.
  3. Wash and chop Yukon Gold potatoes into small pieces.
  4. Boil chopped potatoes in water for about 20 minutes until fork-tender.
  5. Drain potatoes and mash until smooth.
  6. Combine mashed potatoes with butter, kosher salt, and half & half or coconut milk.
  7. Stir in half of the caramelized onions and grated Parmesan cheese until well mixed.
  8. Serve topped with remaining caramelized onions and fresh herbs.
