  • 1 can black beans (15 oz), drained and rinsed
  • 1 can corn kernels (15 oz), drained and rinsed
  • 1 medium tomato, diced
  • 1 medium avocado, diced
  • 1/2 small red onion, finely diced
  • 1/2 cup fresh cilantro leaves, chopped
  • 1 medium jalapeño, finely diced
  • 1 small garlic clove, minced
  • 2 tbsp fresh lime juice
  • 1 tbsp canola oil
  • Ground cumin, kosher salt, and black pepper to taste

Instructions

  1. Prepare your ingredients: Rinse the black beans and corn. Dice the tomato and avocado; finely chop the red onion and jalapeño.
  2. In a large mixing bowl, combine black beans, corn kernels, diced tomato and avocado. Add red onion, jalapeño, minced garlic, and chopped cilantro.
  3. In a small bowl, mix lime juice with canola oil; add cumin, salt, and pepper. Whisk until well combined.
  4. Pour the dressing over the salad mixture; gently toss to coat all ingredients evenly. Adjust seasoning if needed.
  5. Serve immediately or chill in the fridge for 30 minutes to enhance flavors.
