  • 2 cups bread flour
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1 tsp active dry yeast
  • 1 Tbsp olive oil
  • 1/2 tsp squid ink
  • 1 cup warm water (110°F)
  • 4 oz button mushrooms
  • 2 Tbsp butter
  • 1/2 cup shallots (or red onion)
  • 45 cloves garlic, sliced
  • 2 Tbsp cooking apple juice
  • Fresh thyme leaves
  • Jarred pesto sauce
  • Green Pesto Gouda cheese
  • Mixed fresh herbs
  • Balsamic vinegar

Instructions

  1. In a mixing bowl, combine bread flour, garlic powder, salt, and yeast. Add olive oil and warm water, mixing until combined.
  2. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl and let rise for about an hour.
  3. Clean mushrooms and sauté in butter until golden brown. Add shallots and garlic; cook until fragrant. Mix in apple juice and thyme.
  4. Preheat oven to 450°F (230°C). Punch down risen dough, divide into four portions, and roll out each into flatbreads.
  5. Spread pesto sauce over each flatbread base, top with sautéed mushrooms, and sprinkle with cheese.
  6. Bake for 12-15 minutes or until golden brown.
  7. Drizzle balsamic vinegar mixed with honey over baked flatbreads before garnishing with fresh herbs.
