4 tablespoons unsalted butter, softened
1 teaspoon vanilla extract
1 cup peanut butter (creamy, not natural)
1 cup powdered sugar
¾ cup graham cracker crumbs
½ cup crushed Butterfinger bars
8 ounces chocolate bark or chocolate chips
Instructions
In a large bowl, cream together the softened butter and peanut butter using a hand mixer until smooth. Mix in the vanilla extract.
Gradually add powdered sugar while mixing on low speed, scraping down sides as needed. Fold in graham cracker crumbs and crushed Butterfinger bars until combined.
Line a baking sheet with parchment paper. Scoop 1 to 1½ tablespoons of the mixture and roll into balls, placing them on the sheet.
Freeze the balls for about 30 minutes until firm.
