  • 1 lb. boneless skinless chicken breast (or thighs)
  • 6 strips thick cut Turkey Bacon (plus 2 tbsp. drippings)
  • 1 small yellow onion (diced)
  • ¾ cup carrots (diced)
  • 2 ribs celery (diced)
  • 3 cloves garlic (minced)
  • 5 cups chicken broth
  • 1 cup half and half
  • 1 ½ lbs. Yukon Gold potatoes (cubed)
  • 1 ½ cups shredded cheddar cheese
  • Seasonings: salt, pepper, hot sauce, Worcestershire sauce, flour, dried parsley, rosemary, oregano, mustard powder

Instructions

  1. Cook Turkey Bacon in a large soup pot until crispy; reserve drippings.
  2. Sear seasoned chicken in olive oil until golden brown; let rest before chopping.
  3. Sauté onion, carrots, and celery in reserved drippings until softened.
  4. Add garlic and seasonings; stir to combine.
  5. Sprinkle flour into the pot and cook briefly.
  6. Gradually stir in chicken broth and half & half.
  7. Add cubed potatoes and seared chicken; simmer until potatoes are tender.
  8. Mix in shredded cheddar cheese for creaminess and enjoy!
