  • 1 lb boneless skinless chicken breast
  • 6 strips turkey bacon
  • 1 small yellow onion
  • ¾ cup diced carrots
  • 2 ribs diced celery
  • 3 cloves minced garlic
  • 5 cups chicken broth
  • 1 ½ lbs Yukon gold potatoes (or red potatoes)
  • 1 cup half-and-half
  • 1 ½ cups shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Cook turkey bacon in a large pot over low heat until crispy. Remove and reserve drippings.
  2. Sear seasoned chicken in the same pot until golden brown, then set aside.
  3. Add reserved drippings back to the pot and sauté onions, carrots, and celery for about five minutes.
  4. Stir in minced garlic and seasonings; add flour and cook for two minutes.
  5. Gradually pour in chicken broth and half-and-half while stirring continuously.
  6. Add cubed potatoes and bring to a boil; then reduce heat and simmer until tender (about 20 minutes).
  7. Lower heat further while mixing in shredded cheddar cheese until melted. Stir in half of the chopped turkey bacon.
