  • 22.5 lbs deboned skin-on chicken thighs
  • 1/2 cup fresh lime juice
  • 1 teaspoon lime zest
  • 1/4 cup olive oil
  • 3 tablespoons fresh cilantro (chopped)
  • 1 jalapeño (finely chopped)
  • 2 teaspoons chipotle chili powder
  • 5 cloves garlic (minced)
  • 1.5 tablespoons honey
  • 2 teaspoons salt

Instructions

  1. Prepare the chicken by removing bones and rinsing under cold water. Pat dry.
  2. In a large bowl, whisk together lime juice, lime zest, olive oil, cilantro, jalapeño, chipotle chili powder, garlic, honey, and salt.
  3. Reserve some marinade for basting later; coat the chicken with the remaining marinade and refrigerate for at least 2 hours.
  4. Preheat your grill to medium-high heat; brush reserved marinade over chicken.
  5. Grill chicken for about 5 minutes per side until golden brown and cooked through.
