  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp coconut extract
  • 8 oz Cool Whip
  • 2 (3.4 oz) boxes instant coconut cream pudding mix
  • 3 cups half-and-half
  • 1 cup sweetened shredded coconut, toasted

Instructions

  1. Prepare the crust by mixing graham cracker crumbs, sugar, and melted butter in a bowl. Press into a greased 9×13-inch baking dish.
  2. For the cream cheese layer, beat softened cream cheese and powdered sugar until smooth. Add coconut extract and fold in Cool Whip. Spread over the crust.
  3. In another bowl, whisk together pudding mix and half-and-half until thickened. Pour over the cream cheese layer.
