  • 2 Vegan gelatin sheets (4g)
  • 200ml heavy cream
  • 80g mascarpone
  • 120ml coconut milk
  • 120g powdered sugar
  • 140g softened butter
  • 160g all-purpose flour
  • 25g unsweetened cocoa powder
  • A pinch of sea salt
  • 1/2 sachet baking powder
  • 3 egg yolks
  • Grated coconut
  • Gooey Cocoa Spread

Instructions

  1. Prepare the Coconut Mousse: Whip heavy cream and mascarpone until soft peaks form. Soak vegan gelatin sheets, then dissolve in warm coconut milk. Fold into whipped mixture and chill.
  2. Mold the Mousse: Pour mousse into hemisphere molds, adding cocoa spread halfway through. Freeze for 6 hours or overnight.
  3. Make Cocoa Breton Shortbreads: Combine ingredients to form dough, roll out, cut shapes, and bake until firm.
  4. Assemble: Remove frozen domes from molds and place on cooled shortbreads. Thaw before serving and garnish with grated coconut.
