  • 4 medium yellow onions, sliced
  • 23 cloves garlic, minced
  • 6 cups high-quality beef broth
  • 1 tsp fresh thyme (or 1/3 tsp dried thyme)
  • 1 large baguette or crusty bread, sliced
  • 2 cups Gruyère cheese, shredded

Instructions

  1. Sear the beef short ribs in a large pot over medium-high heat until browned on all sides (8-10 minutes). Remove and set aside.
  2. In the same pot, add sliced onions and cook over medium heat until golden brown (20-25 minutes).
  3. Stir in minced garlic, thyme, salt, and pepper; cook for 1 more minute.
  4. Return the short ribs to the pot and add beef broth. Bring to a boil, then reduce heat and simmer for about 2 hours until tender.
  5. Preheat oven broiler. Toast bread slices in the oven for about 2 minutes on each side.
  6. Serve soup in bowls topped with toasted bread and sprinkle with Gruyère cheese. Broil for 1 minute until cheese bubbles.
