  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • Salt and black pepper, to taste
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded cheddar cheese
  • Sliced green onions
  • Extra shredded cheese
  • Crushed tortilla chips

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  2. Add diced onion and minced garlic; sauté until the onion is translucent (3–5 minutes).
  3. Pour in beef broth, diced tomatoes (with juice), corn, black beans, and diced potatoes. Stir to combine.
  4. Season with smoked paprika, chili powder, ground cumin, salt, and pepper; bring to a gentle boil.
