  • 1 pound ground chicken
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup whole milk
  • 2 cups fresh spinach, chopped
  • 1 medium carrot, diced
  • 1 celery stalk, diced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground chicken and cook until browned (5–7 minutes). Remove and set aside.
  3. In the same pot, sauté chopped onion for 3–4 minutes, then add minced garlic for another minute.
  4. Return the chicken to the pot and add chicken broth; stir well.
  5. Mix in heavy cream and whole milk until combined.
  6. Season with dried basil, oregano, salt, black pepper, and optional red pepper flakes; stir well.
  7. Simmer for 10–15 minutes to meld flavors.
  8. Stir in grated Parmesan cheese until melted followed by shredded mozzarella cheese until creamy.
  9. Finally, add spinach, diced carrot, and diced celery; cook for an additional 5–7 minutes until veggies are tender.
