  • 2 tablespoons olive oil

  • 1 can (28oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup heavy cream (or plant-based cream)
  • 5 oz fresh baby spinach
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and black pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook gnocchi according to package directions until they float; drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Sauté chopped onion until softened (about 5-7 minutes).
