  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup heavy cream
  • 5 oz baby spinach
  • 1/2 cup grated Parmesan cheese
  • Dried oregano
  • Dried basil

Instructions

  1. Bring a large pot of salted water to a boil. Cook the gnocchi according to package directions until they float to the surface; drain and set aside.
  2. In a skillet over medium heat, heat olive oil. Sauté chopped onion until translucent (5-7 minutes), then add minced garlic and cook for about one minute.
  3. Stir in tomato paste and combine well. Add crushed tomatoes, dried oregano, dried basil, salt, black pepper, and optional red pepper flakes; bring to a simmer for at least 15 minutes.
