  • 2 medium Yukon Gold potatoes
  • ¼ cup sun-dried tomatoes
  • Fresh basil leaves
  • Heavy cream
  • Garlic

Instructions

  1. Preheat the oven to 425°F (220°C). Toss potato cubes with olive oil, rosemary, garlic, salt, and pepper. Spread on a baking sheet and roast for 20–25 minutes until golden.

  3. In a food processor, blend sun-dried tomatoes, basil leaves, Parmesan cheese, garlic, lemon juice, and heavy cream until smooth.
