  • 1 pint fresh blueberries
  • 1/4 cup white sugar
  • Juice of 1 lemon
  • 8 slices sourdough bread
  • 4 oz white cheddar cheese, grated
  • 4 oz whole mozzarella cheese, shredded
  • 4 tbsp butter
  • Flaky sea salt

Instructions

  1. In a mixing bowl, combine washed blueberries, sugar, and lemon juice. Gently mash until mixed but still chunky.
  2. Layer half of the grated white cheddar followed by half of the shredded mozzarella on one slice of sourdough bread. Spoon some blueberry mixture on top and cover with another slice of bread.
  3. Heat a cast-iron skillet over medium heat and melt butter. Cook the sandwich for 2-3 minutes until golden brown, then flip and cook for another 2-3 minutes until crispy and melty.
  4. Remove from heat, sprinkle with flaky sea salt, slice in half, and serve warm.
