  • 2 Tbsp. extra-virgin olive oil

  • 1 Tbsp. fresh lemon juice
  • 1 Tbsp. whole-grain mustard
  • 1 tsp. honey
  • ¼ tsp. black pepper
  • ¼ tsp. crushed red pepper flakes (optional)

Instructions

  1. Soak sliced red onions in ice water for 15 minutes to soften their sharpness.
  2. Toss cucumbers with salt and let sit for about 15 minutes to draw out moisture.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, lemon juice, mustard, honey, black pepper, and the remaining salt until well combined.
