  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream
  • Juice and zest of 1 large lime
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • ¼ teaspoon kosher salt

Instructions

  1. Make the Dressing: In a mixing bowl, combine mayonnaise, sour cream, lime juice and zest, dill, mustard, garlic, salt, and pepper until smooth. Chill in the refrigerator.
  2. Cook the Shrimp: Bring a large pot of water to boil. Add shrimp and cook for 2 to 3 minutes until pink. Transfer shrimp to an ice water bath to cool, then chop into bite-sized pieces.
  3. Combine: In the bowl with the dressing, add chopped shrimp, diced cucumber, and sliced green onions. Stir gently until well coated.
