  • 1 1/2 cups finely grated carrots
  • 1/2 cup chopped walnuts or pecans (optional)
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat eggs, brown sugar, granulated sugar, vegetable oil, applesauce, and vanilla until smooth.
  4. Add dry ingredients to wet mixture; mix just until combined. Fold in grated carrots and nuts if using.
  5. Pour batter into the prepared pan and bake for 25–30 minutes until a toothpick comes out clean. Cool completely in the pan.
