  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 medium zucchinis (spiralized into zoodles)
  • 1 cup panko breadcrumbs
  • 1 cup marinara sauce
  • 1 cup fresh mozzarella cheese (shredded)

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Season each chicken breast with salt and pepper, then dredge in panko breadcrumbs until fully coated.
  3. Place the breaded chicken in the prepared baking dish and bake for 20-25 minutes or until the internal temperature reaches 165°F (75°C).
  4. Remove from the oven, pour marinara sauce over each chicken piece, and top with mozzarella cheese. Return to the oven for an additional 5-7 minutes until the cheese is bubbly and golden.
  5. While the chicken bakes, spiralize the zucchinis into zoodles using a spiralizer.
