Ingredients

Scale
  • 2 1/23 cups white whole wheat or all-purpose flour
  • 1 packet (2 1/4 teaspoons) instant yeast
  • 1/4 teaspoon kosher salt
  • 1 cup warm water or warm milk
  • 2 teaspoons honey
  • 7 tablespoons salted butter
  • 1/4 cup granulated sugar
  • 3 teaspoons cinnamon
  • 1/2 cup brown sugar
  • 1 cup powdered sugar
  • 2 tablespoons cream cheese
  • 1 teaspoon pure vanilla extract

Instructions

  1. In a stand mixer bowl with a dough hook, combine flour, instant yeast, and salt. Add warm water or milk, honey, and 1 tablespoon butter. Knead on medium speed until smooth (about 1-2 minutes). Cover and let rise for 30 minutes to an hour.
  2. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  3. Mix granulated sugar and cinnamon in a bowl for the topping.
  4. Roll out the dough into a rectangle about 1/4 inch thick. Spread with remaining butter and sprinkle with cinnamon-sugar mixture. Fold in half and cut into strips; twist each strip into knots.
  5. Combine melted butter with remaining cinnamon and brown sugar; spoon over each knot.
  6. Bake for 8-10 minutes until golden brown; check during baking to ensure even cooking.
  7. For the glaze, mix powdered sugar, cream cheese, vanilla extract, and enough water for desired consistency.
  8. Drizzle glaze over warm knots before serving.
