  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1/3 cup light brown sugar
  • 1 (15oz) can pure pumpkin puree or 2 cups homemade pumpkin puree
  • 3/4 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon fine sea salt

Instructions

  1. Preheat your oven to 425°F (220°C). Roll out the pie crust and place it in a pie dish.
  2. In a large mixing bowl, whisk together the eggs, then add granulated sugar and light brown sugar until smooth.
  3. Mix in pumpkin puree, heavy whipping cream, and vanilla extract until well combined.
  4. Add spices and salt; whisk until evenly mixed.
  5. Pour filling into the crust and bake for 15 minutes. Reduce temperature to 350°F (175°C) and bake for another 45 minutes until set.
  6. Allow to cool before serving with whipped cream.
