  • 3 cups seedless watermelon (cut into small pieces)
  • 3 roma tomatoes (seeded and diced)
  • 1 English cucumber (seeded and diced)
  • 1 small red onion (diced)
  • 1 medium red bell pepper (chopped)
  • 1 clove garlic
  • ¼ cup mint leaves
  • ½ jalapeno pepper (remove seeds if less heat is desired)
  • Salt and pepper to taste
  • Olive oil
  • Red apple vinegar

Instructions

  1. Cut the watermelon into small pieces and discard any seeds.
  2. Dice the tomatoes, cucumber, red onion, red bell pepper, garlic, and jalapeno.
  3. In a blender, combine all ingredients except olive oil and vinegar; blend until smooth or desired consistency is reached.
  4. Add olive oil and vinegar; pulse to mix.
  5. Taste for seasoning; adjust salt and pepper if necessary.
  6. Chill in the refrigerator for at least one hour before serving.
