  • 1/4 cup unsalted butter (softened)
  • 3 cloves garlic (minced)
  • 3 sprigs rosemary (minced)
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 fryer chicken (broken into 6 or 8 pieces)
  • 1/2 cup balsamic vinegar
  • 1/2 cup fig preserves
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 425 °F (218 °C).
  2. In a bowl, mix softened butter with half of the garlic, rosemary, salt, and pepper.
  3. Rub the butter mixture over the chicken pieces in a cast iron skillet.
  4. Roast in the preheated oven for about 10-15 minutes.
  5. While roasting, whisk together balsamic vinegar, fig preserves, remaining garlic, rosemary, salt, and pepper until smooth.
  6. Brush most of the sauce over the chicken and return to the oven.
  7. Baste every 10 minutes until the chicken reaches an internal temperature of 165 °F (74 °C), cooking for approximately 25 minutes total.
  8. Let rest before serving with remaining sauce on top.
