  • 2 salmon fillets (6 oz each)
  • 4 cups fresh spinach, chopped
  • ½ cup grated Parmesan cheese
  • 2 tsp Cajun seasoning
  • 1 tbsp olive oil (plus more for drizzling)

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  2. In a skillet, heat 1 tbsp olive oil over medium heat and sauté the chopped spinach until wilted, about 2 minutes. Remove from heat and mix in the grated Parmesan cheese.
  3. Generously rub Cajun seasoning on both sides of each salmon fillet.
  4. Create a pocket in each fillet by slicing horizontally without cutting all the way through. Stuff the spinach mixture evenly into each salmon pocket.
  5. Place the stuffed fillets in the baking dish, drizzle with additional olive oil, and bake for 15-20 minutes or until the salmon flakes easily with a fork.
