  • 5 1/4 oz butter
  • 1 egg yolk
  • 5 tbsp cold water
  • 7 oz zucchini
  • 5 1/4 oz shredded cheese (cheddar, gouda, feta)
  • 5 1/4 oz cream
  • 2 eggs plus extra egg white
  • Pinch of ground nutmeg
  • Optional sun-dried tomatoes and green onions

Instructions

  1. In a food processor, combine flour and salt. Add butter and pulse until crumbly. Mix in egg yolk and cold water until dough forms. Chill for at least 30 minutes.
  2. Preheat oven to 375°F (190°C).
  3. Roll out dough on a floured surface and cut into circles for your baking dish or muffin tin.
  4. Grate zucchini and squeeze out moisture. Mix with eggs, cream, cheese, nutmeg, and herbs.
