  • 2½ teaspoons baking powder
  • 1 teaspoon salt
  • 2⅓ cups granulated sugar
  • 1 cup unsalted butter (softened)
  • ⅓ cup vegetable oil
  • 1 tablespoon vanilla extract
  • 1⅓ cups buttermilk (room temperature)
  • 7 large egg whites (room temperature)
  • ⅔ cup rainbow jimmies

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. In one bowl, whisk together flour, baking powder, and salt. In another bowl, cream butter and sugar until fluffy. Mix in vegetable oil and vanilla.
  3. Gradually add dry ingredients and buttermilk alternately until smooth. Fold in egg whites and then gently stir in rainbow jimmies.
  4. Divide batter between prepared pans and bake for 30–35 minutes or until a toothpick comes out clean.
  5. Cool cakes for 10 minutes before transferring to a cooling rack. Once cooled, frost with buttercream made from softened butter, powdered sugar, salt, vanilla extract, and heavy cream.
