  • 12 oz linguine
  • 1 tbsp butter
  • ¾ cup heavy cream
  • ¾ cup grated Parmesan
  • Salt & pepper to taste
  • Pasta water (as needed for consistency)

Instructions

  1. In a large mixing bowl, combine ground beef, egg, breadcrumbs, Parmesan cheese, parsley, minced garlic, salt, and pepper. Mix gently until just combined.
  2. Form mixture into 1-inch meatballs (about 20–24 total).
  3. Heat olive oil in a skillet over medium heat. Sear meatballs in batches until browned on all sides (about 6–8 minutes). Remove and set aside.
  4. In the same skillet, reduce heat to low; add butter and minced garlic. Cook for about 1–2 minutes until fragrant.
  5. Stir in lemon juice and parsley; return meatballs to the skillet and simmer for an additional 5–7 minutes.
  6. Cook linguine according to package directions; reserve some pasta water before draining.
  7. In a saucepan, melt butter over medium heat; add heavy cream and bring to a gentle simmer.
  8. Stir in Parmesan cheese until melted; adjust consistency with reserved pasta water as needed.
  9. Toss cooked linguine in the creamy sauce before plating with meatballs on top.
