  • 6 boneless, skinless chicken breasts
  • 1/2 cup olive oil
  • 3 tablespoons fresh-squeezed lemon juice
  • 1 tablespoon garlic powder
  • 2 teaspoons Spike Seasoning (or another all-purpose seasoning blend)
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon black pepper

Instructions

  1. Trim chicken breasts to an even thickness and make shallow slits for marination.
  2. Whisk together the marinade ingredients: olive oil, lemon juice, garlic powder, seasonings, and herbs.
  3. Marinate the chicken in a Ziploc bag for at least 5-8 hours.
  4. Preheat the grill to medium-high heat and prepare grates with non-stick spray.
  5. Grill the chicken on one side for about 3–4 minutes until marked; flip and continue cooking until internal temperature reaches 165F/74C.
  6. Serve hot and enjoy leftovers cold in salads or wraps.
