  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened to room temperature
  • 3/4 cup brown sugar, packed
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 2 teaspoons vanilla extract
  • 1/3 cup molasses
  • 1/3 cup turbinado or granulated sugar
  • 6 tablespoons unsalted butter, softened to room temperature
  • 23 cups icing sugar, sifted
  • 34 tablespoons eggnog

Instructions

  1. In a large bowl, whisk together flour, ginger, cinnamon, baking soda, and salt.
  2. In another bowl, beat softened butter and brown sugar until smooth. Add egg, yolk, vanilla extract, and molasses; mix until combined.
  3. Gradually add dry ingredients to the wet mixture and mix until fully combined. Refrigerate dough for 30 minutes.
  4. Preheat oven to 350°F (175°C). Roll chilled dough into balls and coat in sugar before placing them on lined cookie sheets.
  5. Bake for 8–10 minutes until just set; cool on racks.
  6. For frosting, beat butter and gradually add icing sugar and eggnog until desired consistency is reached.
  7. Assemble cookies by spreading frosting between two cookies.
