  • 1/3 cup molasses
  • 1/3 cup turbinado or granulated sugar
  • 6 tablespoons unsalted butter, softened to room temperature
  • 23 cups icing sugar, sifted
  • 34 tablespoons eggnog
  • 1/4 teaspoon vanilla extract (Alcohol-Free), optional

Instructions

  1. In a large bowl, whisk dry ingredients: flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt.
  2. In another bowl, cream softened butter and brown sugar until smooth. Add egg, egg yolk, vanilla extract, and molasses; mix until combined.
  3. Gradually incorporate the dry mixture until fully blended. Chill dough for 30 minutes to 24 hours.
  4. Preheat oven to 350°F (175°C). Form dough balls and roll in turbinado sugar. Bake for 8-10 minutes; cool on racks.
  5. For frosting: Beat softened butter until smooth; gradually add icing sugar and eggnog until desired sweetness is achieved.
  6. Assemble cookies by spreading frosting on one cookie and topping with another.
