  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic (minced)
  • ½ small red onion (finely chopped)
  • 1 ½ cups cherry tomatoes (halved)
  • ½ cup Kalamata olives (sliced)
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp salt (or to taste)
  • ¼ tsp black pepper
  • ½ cup feta cheese (crumbled)

Instructions

  1. Cook pasta in a large pot of salted boiling water until al dente. Reserve ½ cup of pasta water, then drain.
  2. In a skillet over medium heat, warm olive oil. Sauté garlic and red onion until fragrant.
  3. Add cherry tomatoes and olives; stir in lemon juice, lemon zest, oregano, basil, salt, and pepper. Cook for about 3-5 minutes until tomatoes soften.
  4. Combine drained pasta with skillet mixture; toss to coat evenly. If needed, add reserved pasta water for desired consistency.
  5. Gently fold in crumbled feta cheese before serving warm.
