  • 12 oz (340g) pasta (penne or fusilli)
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic (minced)
  • ½ small red onion (finely chopped)
  • 1 ½ cups cherry tomatoes (halved)
  • ½ cup Kalamata olives (sliced)
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp salt (or to taste)
  • ¼ tsp black pepper
  • ½ cup feta cheese (crumbled)

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  2. In a skillet over medium heat, add olive oil. Sauté garlic and red onion until translucent.
  3. Stir in cherry tomatoes and Kalamata olives; cook for about 3–4 minutes until softened.
  4. Add lemon juice, lemon zest, oregano, basil, salt, and pepper to the skillet.
  5. Toss in the drained pasta and crumbled feta cheese. If needed, add reserved pasta water gradually until desired sauce consistency is reached.
  6. Serve hot, garnished with fresh basil if desired.
