  • 8 to 10 boneless skinless chicken thighs
  • 1 cup plain full-fat Greek yogurt
  • 3 to 4 sprigs fresh dill
  • 1 minced shallot
  • 3 tablespoons minced garlic
  • Juice and zest of 1 lemon
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon dried oregano

Instructions

  1. Pat dry the chicken thighs using paper towels.
  2. In a mixing bowl, combine Greek yogurt, dill, shallot, garlic, lemon juice and zest, salt, pepper, paprika, and oregano.
  3. Add the chicken thighs to the marinade and toss to coat evenly.
  4. Cover and marinate in the refrigerator for at least one hour or overnight for maximum flavor.
  5. Preheat your grill to 400°F (200°C).
  6. Grill the marinated chicken thighs for about 8 to 10 minutes on each side until fully cooked.
  7. Allow the chicken to rest for five minutes before serving.
