  • 4 large boneless skin-on chicken breast halves (1012 ounces each)
  • 3 tablespoons minced garlic
  • 1 teaspoon kosher salt
  • ½ cup chopped fresh basil
  • ¼ cup extra virgin olive oil
  • Olive oil, salt, and black pepper for seasoning
  • Fresh parsley for garnish

Instructions

  1. Prepare the Marinade: In a bowl, combine minced garlic, salt, chopped basil, and olive oil until well mixed. Use a mortar and pestle for a smoother paste if desired.
  2. Marinate Chicken: Rub the marinade on both sides of the chicken breasts. Place in a gallon zip lock bag and refrigerate for 4 to 12 hours.
  3. Preheat the Grill: Remove the chicken from the bag and wipe excess marinade off the skin side. Brush with olive oil and sprinkle with salt and pepper.
  4. Grill Skin Side Down: Place chicken on medium heat skin side down for 8-10 minutes, turning it halfway through to create grill marks.
  5. Flip Chicken: Once crispy, flip the chicken over to a cooler part of the grill. Cook covered for another 8-10 minutes until internal temperature reaches 155°F.
  6. Rest Before Serving: Remove from grill and cover loosely with foil for about five minutes before serving.
