  • 1 pound sirloin or flank steak
  • ¼ cup olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons lemon juice
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 cup plain yogurt
  • 1 clove garlic, minced
  • 2 tablespoons fresh mint, chopped
  • 1 tablespoon lemon juice
  • 4 flatbreads or pita breads, about 10 inches each
  • 1 cup cucumber, sliced
  • 1 cup tomatoes, diced
  • 2 cups shredded lettuce
  • ½ cup red onion, finely chopped
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a bowl, mix olive oil, soy sauce, lemon juice, cumin, paprika, garlic powder, salt, and pepper. Add beef chunks and refrigerate for at least 1 hour (overnight preferred).
  2. Combine yogurt, minced garlic, mint, lemon juice, salt, and pepper in a bowl and chill.
  3. Thread marinated beef onto skewers; grill on medium-high heat for 8–10 minutes until charred.
  4. Heat flatbreads in the oven or on the grill for about 2 minutes.
  5. Add grilled beef and veggies to warmed flatbreads with yogurt sauce; fold and roll tightly.
