  • 1/3 cup granulated sugar, plus extra for sprinkling
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • Zest of 1/2 lemon
  • 1 teaspoon heavy whipping cream
  • 2 disposable foil pie pans

Instructions

  1. Preheat your grill to 350°F.
  2. In a large mixing bowl, combine the berries, granulated sugar, cornstarch, lemon juice, and zest. Toss gently until well mixed.
  3. Unroll the pie crust into one of the disposable foil pie plates. Add the berry mixture in the center and fold up the edges to create a rustic look. Brush the edges with heavy whipping cream and sprinkle with sugar.
  4. Place another foil pie plate upside down on the grill grates as a base; set your assembled pie on top of this inverted plate. Close the lid and grill for 20-30 minutes, checking frequently after 15 minutes to prevent burning.
  5. Once golden brown, carefully remove from the grill and let cool before slicing.
