  • 1 ½ pounds skinless boneless chicken breast or thighs (1-inch cubes)
  • 2 tablespoons fresh squeezed lemon juice
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons dried za’atar or oregano
  • 1 clove crushed garlic
  • ¾ cup plain low-fat yogurt
  • ¾ cup finely chopped cucumber (peeled and seeded)

Instructions

  1. In a mixing bowl, combine lemon juice, olive oil, za’atar, garlic, salt, and pepper. Add chicken cubes and coat well. Cover and refrigerate for at least 2 hours.
  2. For the yogurt sauce, mix yogurt, cucumber, lemon juice, dill, mint, salt, and pepper in another bowl. Refrigerate until ready to serve.
  3. Preheat the grill over medium-high heat.
  4. Thread marinated chicken onto skewers with space between pieces for even cooking.
  5. Grill kabobs for about 10-15 minutes until they reach an internal temperature of 165°F.
  6. Serve warm with lemon wedges and cucumber yogurt sauce.
