  • 8 boneless, skinless chicken breasts
  • 2/3 cup balsamic vinegar
  • 1/4 cup Dijon mustard
  • 1/4 cup olive oil
  • 1 tablespoon dried parsley
  • 1 tablespoon dried shallots or onion
  • 1 tablespoon Spike seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1/2 teaspoon coarse ground black pepper

Instructions

  1. In a mixing bowl, combine balsamic vinegar, Dijon mustard, olive oil, and spices to create the marinade.
  2. Trim fat from chicken breasts and make small slits across each piece. Place in a Ziploc bag and pour in the marinade. Seal and refrigerate for 4-6 hours.
  3. Preheat grill to medium-high heat and grease grates with oil on a paper towel.
  4. Remove chicken from marinade and allow it to come to room temperature. Grill for about 3 minutes per side until cooked through and firm to touch.
  5. Let the chicken rest for a few minutes before serving.
